It’s no secret that Austin’s food scene attracts visitors from around the world who come to experience the fusion dishes and unique palettes of the city.
Austin City Limits’ food hall, ACL Eats, is no different.
From local Texas barbeque to acai bowls and dumplings, the city’s brick-and-mortar staples set up shop around the festival for people to explore.
Beginning in 2009, Chef Tim Love of Fort Worth took on the role of ACL’s official chef. This weekend, Love celebrates 15 years of serving up various dishes, including special meats they smoke on site.
“Today, we are roasting a couple of pigs,” Love said Friday. “We roast whole animals here every day.”
The culinary pioneer displays exhibits of cuisines in his restaurants nationwide. He said he has something for everyone, from steakhouses to barbecues and burgers to bistros.
Chef Love has the pleasure of serving many of the headliners each year. Dua Lipa, Chris Stapleton, Benson Boone and blink-182 are a few of the big names taking the stage for this year’s festival.
“Establishing those relationships and getting to be at their dinner table — I’m just lucky to be able to do that,” he said.
Aside from serving up meals to festival-goers, Chef Love enjoys the exclusivity of meeting many of the artists.
“I’m a big music fan, so getting to meet all of the people involved with the music and the behind-the-scenes stuff like that, I really love,” he said.
When asked about his favorite vendors, aside from his own of course, he praised Tycoon, a Thai restaurant with vibrant flavors and lots of fresh herbs.
Chef Love said he is also excited for the debut of a new Austin oyster company that will serve lobster rolls and caviar bumps, for all of the seafood lovers.
Chef Love will be at the festival’s second weekend, continuing to serve up what he loves.
